Founded in 1980, this school offers 20 to 25 demonstration and participation classes each month on such topics as ethnic and regional cuisines, holiday menus, and guest chef specialties. Part of Relais & Chateaux, LIcole des Chefs is an innovative program enabling passionate amateur cooks to enter some of the world's greatest kitchens as culinary interns. Worldwide participants include Charlie Trotter's, The French Laundry, Le Manoir aux Quat'Saisons, L'Arpege and numerous others. Interns may spend up to ten hours a day in the kitchen as they shadow the staff, working their way through garde manger, saucier, meat and pastry stations. Tante Maries Cooking School in San Francisco was founded as a full-time school in 1979 and was one of the first schools of fine cooking in this country to offer all-day, year-round classes for people who are serious about cooking well. Courses range in length from one day to one week to six months and, for the most part, teach the principles and techniques for French cooking as applied to modern California cooking.
